This stunning greens and beet salad recipe is one to turn heads. Roasted red and golden beets rest on a bed of vibrant and bitter radicchio leaves. Then a showering of toasted pecans over the top offers texture and an unexpected hint of umami, while a sprinkle of fresh parsley leaves tames some of the bitterness of the radicchio.
The salad gets drizzled with a shallot honey-mustard vinaigrette that’s lip-smacking good. It’s a perfect salad to serve alongside brisket or latkes for a Hanukkah menu, or as a beautiful side for any other holiday or winter meal.
To separate the leaves of the radicchio and minimize any tearing, slice off the stem end and peel the leaves from stem to leaf.

Ingredients
2 medium red beets, scrubbed and trimmed
2mediumgolden beets, scrubbed and trimmed
7Tbspolive oil, divided
1/4cuprice vinegar
2Tbsp finely chopped shallot
1Tbsphoney
1Tbsp whole-grain mustard
1 1/2tspkosher salt
1/4tsp freshly ground black pepper
8cupsradicchio, leaves separated (1 head)
1/2cupchopped toasted pecans
1/2cup fresh flat-leaf parsley leaves
Directions
Preheat oven to 425°F. Place beets in a baking dish large enough to fit them in a single layer. Drizzle with 1 tablespoon oil and cover tightly with aluminum foil. Bake until fork-tender, 50 to 60 minutes. Remove foil and let beets stand until cool enough to handle, about 10 minutes. Brush skins off beets with a paper towel; discard skins. Slice beets into 1/4-inch thick slices.
Whisk vinegar, shallot, honey, mustard, salt, pepper, and remaining 6 tablespoons oil in a small bowl.
Place radicchio leaves in a large bowl. Toss with about half of vinaigrette. Transfer to a serving platter. Place beets in bowl and toss with 2 tablespoons vinaigrette.
Arrange beets over radicchio. Drizzle with more vinaigrette and top with pecans and parsley.
